Red Velvet Muffins

Beetroot is not my favourite and don't like them either cooked or raw and was looking at ways to include them in my diet which could be tasty and enjoyable
I am sure most of you would love a red velvet cake but most store bought cakes are loaded with sugar, refined flour and artificial colours just adding empty calories to your diet with absolutely no nutrition.
This recipe is easy to make and a healthy version to red velvet with a hidden vegetable in it which is difficult for anyone to know. And all the bad stuff(ingredients ) are substituted with whole wheat flour , almond and coconut oil (both healthy fats) and jaggery .
I've discovered that beet retains the red colour in an acidic environment and adding a bit of lemon juice does the trick. Vinegar would work well too but I prefer freshly squeezed lemon.
Also since I have turned a vegetarian recently I prefer to make eggless cakes and this cake turned out moist and light texture with no taste of beet at all

RED VELVET MUFFINS (Makes 8 muffins)
Ingredients
Beetroot - 1/2 cup
Curd - 1/3 cup
lemon juice - 1 tsp
Whole wheat flour - 1/2 cup
Almond powdered - 1/2 cup
Cocoa powder - 3 tsp
Salt & baking powder - 1/4 tsp
Jaggery powder - 1 cup
Coconut oil - 1/4 cup
A2 Milk - 1/2 cup
METHOD
Preheat the oven to 375 degrees fahrenheit
Cook the beets in pressure cooker for 3 whistles or 10min
Peel and chop the beets , Add to a food processor to make a silky smooth puree. Measure 1/2 cup of beet puree and keep aside
Combine the whole wheat flour, baking powder,almond powder and salt. Set aside
Cream coconout oil and jaggery.
Add beet puree along with lime juice
Slowly mix the dry ingredients to the wet mix
Add milk
Pour the mix into the muffin moulds
Bake 20 minutes or until a skew comes out clean when inserted in the centre of a cupcake
NOTES
Depending on the oven temperature ,baking time may vary .
To achieve best colour make beet puree as smooth as possible
Coconut sugar can be used instead of jaggery
