Mango Coconut Cake

This cake is gluten free, vegan and sweetened only with jaggery
Mango is my favourite fruit and I always look for ways to include them to my food during the season and want to have a lot of them before its all over
I felt its not a good option to include mango in the cake but I could imagine it to be a good frosting and I was thinking of a cake to pair with this flavour. Mango and coconut has been something I tried before while making a mousse. So I tried to use coconut flour and added some almonds to get a good texture
Eggless is something I try as much to make after turning a vegetarian so I have used flaxseed and banana to get a good moist cake
The cake was super moist ,fluffy and the mango cream was a perfect pair to this cake.
Ingredients
For the cake
Almond - 1 cup
Coconut flour - 1.5 cup
Flaxseed - 2 tbsp
Banana ripe - 3
Jaggery - 2 cups
Coconut milk - 1/2 cup
Coconut oil -1/2 cup
Frosting
Ripe Mango -2
Coconut milk - 1 cup
Jaggery - 1/2cup

METHOD
Preheat the oven to 375 degrees fahrenheit
Grind Almonds to a fine powder and mix with coconut flour. Add baking powder to this and mix
Mix flaxseed in 1/2cup hot water . Let it soak for 10mins. Stir until gel like and then grind in the mixer to a paste.
Smash banana and blend it with flaxseed,oil,coconut milk and jaggery. Mix well until it creams together
Mix the dry ingredients evenly.
Bake in the oven or microwave in convection mode for 10minutes
In the meanwhile grind the mango to a smooth paste and mix with coconut milk and jaggery. Be careful while adding coconut milk (if the coconut milk is thin)as the cream may become watery. It needs to be thick enough to be able to spread on the cake.
Once the cake cools down cut the cake into two and add mango cream in the centre.
Top the cake with the cream and keep in fridge for about an hour until the cream sets.

Make a choice to turn healthy by removing Maida and refined sugar from your diet. Lets add more nutrition by including fresh fruits and healthy ingredients(almond,coconut,flaxseed).
Almond is rich in Vitamin E and has antioxidant properties . Coconut helps to improve gut health and add good fats to your diet. Flaxseed in rich in omega 3 .
